Using leftover turkey (or maybe even ham), rice, a couple of eggs and some Chinese 5 spices you can whip up a very quick taste Christmassy dinner.
This can be quite a dry dish, so I would add a lot of red peppers (more that I did for the photos here) to add more liquid. At the same time cook your rice to packet instructions. Add oil to the pan and back under the medium heat, add the brussel sprouts and broccoli florets. Let them brown a little and start to soften before adding the leftover turkey, red pepper and mushrooms to the pan. Make sure to keep stirring the pan to stop the vegetables sticking to the bottom of the pan. After the turkey is completely warmed through add the cooked rice to the pan along with the Chinese 5-spice, adding more if necessary. (5-spice can be quite strongly aniseedy so be careful not to over do it). Finally add the two eggs, stiring to break them up in the pan, and coat the rice and vegetable with egg. Once the egg has whitened and cooked plate up. Soy sauce is lovely liberally sprinkled on the top.

This is a recipe I first made at the start of December but it is so perfect for Christmas leftovers that I wanted to leave posting it till now.
Toast the cashew nuts in a frying pan under a medium heat until they start to brown, remove from heat placing on a plate until later.
