Today is the first time I have had or cooked gnocchi, it was an enjoyable experience. I love things quick and easy (or slow and easy) and gnocchi definitely fits into the fast category.
One of the things I really love about reading food blogs, is the idea of trying something new, comes more gradually. I’ve never been one to walk around a supermarket and pick things up that I have never seen or heard of before – that’s just not me. So a lot of things I’ll walk by time and time again – never knowing that they could be the answer to some of life’s questions.
For example
I am bored of rice, pasta and potatoes. What can I have instead?
Slowly but surely I have had gnocchi recommended to me by people all over the globe. Some who made them themselves, others who just cooked them, so today when I walked past the gnocchi, I thought “I’m going to have that for dinner”.
It worked perfectly, now I have broadened my food horizons once more I can now think of thousands of alternatives to this wonderful salmon and pesto dish. I am already thinking about how to make my own gnocchi!
Pesto Salmon and Gnocchi
~ this isn’t exactly the worlds most taxing recipe. Serves 2.
- 4 tablespoons of pesto, you can use store bought or make your own broccoli pesto.
- 2 salmon fillets
- 1/2 a small onion
- 300 grams of gnocchi
- Cooking spray
Spray a small amount of cooking spray onto a frying pan, adding the salmon fillets and onions to the pan over a high heat.
Spread 1 tablespoon of pesto on to each salmon fillet (the rest of the pesto will be added to the gnocchi). Leave the salmon till it is almost cooked. Do not flip.
Heat the grill (or broiler) and once the salmon is looks like it has cooked most of the way through (around 8 minutes) put the frying pan under the grill.
Put a pan of boiling water on a high heat and once boiling, add the gnocchi. When the gnocchi are ready they will float to the top of the water. Remove them once they are ready using a slotted spoon into a bowl and mix with the remaining pesto.
Once the top of the salmon is cooked, and the pesto bubbling slightly remove from the grill. To each plate add half the gnocchi, and then top with the salmon fillet and the fried onions.
