Last year for the first time I made my own Christmas cake flavoured with chocolate and cherries. It was meant to be a little different, but to be honest it wasn’t that different from a traditional Christmas Fruit Cake.
This year I am trying again to go a little on to the unusual side. In this case by using Indian spice blend Garam Masala instead of just the usual Christmas spice collection: cinnamon, ginger, cloves and all spice.

I’m not going to go through the recipe in detail, but here are some of the steps, to get you in the mood for your own Christmas cake making!
Hand chopping almonds is quite a lot of effort, next time I’ll just buy flaked or chopped almonds instead.
Ditto, with pistachios (and the walnuts) chopping nuts and glacé cherries was also very messy…
Once you’ve done all the chopping add in orange juice and brandy then leave to sit for a couple of days.
