This blog post is part 2 in a possibly never ending series where I try to find a cupcake frosting I like. I have already tried buttercream filling in my Butterfly Cakes so due to Amanda’s of Amanda’s Cookin’ suggestion my next attempt is to try a cream cheese filling.

Following on from my weekend of baking, I decided to try this recipe from For the love of cooking which was one of the first food blogs I added as an RSS feed back at the start of the year. If you haven’t had a chance to check it out you should!
As I mentioned in my last post, I have been experimenting using Coconut Oil as a shortening rather than butter. My first real attempt was to make a very simple change to the Nutella and Bran Cookies I put up a couple of weeks ago.
The result was amazing, and definitely better than my original attempt.
