I have been looking for baking projects that I can make over the weekend, freeze and then take into lunch during the week. I found this recipe on The Kitchn for Spiced Lentil, Sweet Potato and Kale Pockets which seemed to fit the bill.

Cooked Sweet Potato and Spiced Lentil Pockets

Think of a pizza pocket, but instead of the stringy cheese, you have spiced lentils and sweet potato. The wonderful thing about these pockets is that they don’t need to be reheated, you can just let nature defrost them for you.

Summer Lentil Soup

I haven’t made soup in a long time, it never seems right to make soup in the summer. However I keep getting so many carrots in my vegetable box that I am running out of ideas of how to use them all up. I felt it would be a good start to the weekend to crack on with some cooking, before I get too hungry and pop round to one of the amazing cafes round the corner instead.

Some recipes need to work harder than others to impress, a beautifully colored spring salad with bright green leaves and vivid red tomatoes is easy to sell to others. Similarly (but at the opposite end of the spectrum) a pizza oozing cheese, topped with pepperoni and a side of chips is always going to go down well.

Slow Cooked Lentil and Vegetable Curry

Getting up early isn’t one of my strong points, so you know I must be excited about a new recipe when I jump out of bed to get it started. (I have only done this once before, for my ill-fated bba bagels.)

Cooking before work is a strange experience, I always end up in the twinned positions of being rather smug that I have been so productive but also cutting it very very fine for my first meeting of the day. With slow cooking however you have little choice, if you want a slow cooked meal ready for coming home to – you have to make sacrifices.
