I had to admit I was pretty surprised to see that I have never blogged a Cauliflower Curry before.

I have taken pictures before, I have folders and folders of them on my Mac, but I guess it just seems too simple to post. Let’s face it, Cauliflower is never going to be the sexiest vegetable.

My once monthly lonely Indian Curry night strikes again with another, even if I do say so myself, fantabulous vegetarian curry. Last month I finally made this wonderful Beetroot Curry, this month I turn to a vegetarian version of this Lamb Rogan Josh from Them Apples.

As I may have said before, the other half loves rice, he will infinitely prefer rice with his chinese to noodles (which is a shame as noodles are so much quicker to prepare). Fennel, Orange and Pecan Quinoa Salad

In January most people start to detox a little after all the Christmas indulgences, I say most people because I did not. I ate my way through all the chocolate and cakes, and then bought or made more. While it was amazing at the time I am starting to notice the negative impacts of all my fun and relaxing.

So here we go. First step a healthy lunch for tomorrow at work.

When I thought about healthy eating I thought salad – but lettuce leaves are boring, or pasta but it’s a bit carb-elicious, then Quinoa came to mind. Quinoa is a great source of protein so it is especially good for vegans and vegetarians (although I am obviously neither).

Sweet Beet Soup

I make a lot of soups, they are perfect for me to take into work, reheat in the microwave and are healthier than whatever I would normally buy. Often I get questions from my work mates about the soups I bring in, “What’s in it?” and “Where did you buy it?”. But no soup has had quite the response that this one does.

Cauliflower and Broccoli Potato Quiche

I read this recipe on potato crust quiche and something in my head just snapped into place. I love quiche, but I dislike the ones I buy in supermarkets. I’ve made my own quiche once and while it was good, the shortcrust pastry didn’t exactly go to plan.

Seeing the potato crust idea was like aligning the stars, I could have homemade quiche without the extra hassle. It is also generally healthier using potatoes rather than pastry 🙂

Indian Dosas – Daring Cooks

This month is my first Daring Cooks, and I am so glad that I signed up. Indian food is one of my all time favourites, and a regular dish in our household, so I’ve never needed an excuse to try a new recipe. Dosa’s are essentially Indian savoury pancakes, filled with a spicy chickpea and vegetable mixture and topped off with a curry sauce.

This month’s Daring Cooks challenge came from Debyi from Healthy Vegan Kitchen with a recipe from Refresh: Contemporary Vegan Recipes. The challenge was to create a truly vegan meal.
