As I may have said before, the other half loves rice, he will infinitely prefer rice with his chinese to noodles (which is a shame as noodles are so much quicker to prepare). Risotto is one of our favourites meals, lots of rice and I can use whatever vegetables we have. But I get bored easily, I like a bit of a change, the idea of using pearl barley rather than rice, appeals because it’s a much more traditional Scottish ingredient

This Lemon and Blueberry cake has been on my list ever since it was on the front cover of BBC Good Food magazine for their March edition. They labelled it as the perfect Mother’s Day cake, but to me this cake says one thing – Spring!
It has hard to remember that spring is coming when it’s been raining all day, the winds are ferocious and snow is forecast for tomorrow morning. Yet there has been the odd day when the sun has broken through and you can almost remember what summer is like. This cake is for getting us through till then 🙂
Today is a year since I wrote my first blog posts here on CoffeeMuffins, and I am so proud of my baby. I feel that with this blog I have created something from nothing, in much the same way I did when I made my first loaf of bread or when I had my first dinner party.
With any sort of anniversary it gives you that nudge to take stock of where you stand and what you have accomplished. To see all the successes and the failures, and hopefully to allow you to learn from them.
Today is the first time I have had or cooked gnocchi, it was an enjoyable experience. I love things quick and easy (or slow and easy) and gnocchi definitely fits into the fast category.
Often we food bloggers forget how to do simple we start caramelising our pears and over egging the omelette. Sometimes simple is just as good as our over the top attempts at chef quality food, sometimes simple can be even be better.
I have tried to make a cake with pear before but it just didn’t work out, it sunk in the middle and wasn’t very appealing to look at. I never posted it, but I still have the pear cake bug, every time I see a pear I want to wrap it something fluffy and sweet.
This weekend I bought three pears with the sole purpose of forcing me to try again. I found this pear cake recipe by Hugh Fearnley-Whittingstall.
Meals aren’t always invented by choosing the ingredients that go best together, often meals come together from necessity. From whats left over, from whats kicking around at the back of the freezer, from snatches of other meals prepared or sampled.
That is what this is: sausages from the freezer, chard from my veggie box and polenta, well because I have seen so many amazing looking polenta dishes recently (and to be honest a complete dearth of rice or potatoes).
Yesterday in the UK the weather seemed to really turn a corner, there were blue skies, and you could feel the warmth from the sun. It was perfect and long past overdue!
I have been meaning to try these muffins for a while, originally because I thought they might give me a shot of sunshine despite there not being any really sun to speak of. However for once the recipe and the weather aligned and I got a perfect Spring muffins.
I am jumping from one extreme to the other on this blog recently, from slow cooking to super-fast cooking. I love cooking and baking, but my love for it is somewhat diminished on a Tuesday evening after a long day at work.
This is when I like things super-fast, I always have stir-fry vegetables in my fridge for those nights when the temptation will be so strong that you might just phone a takeaway instead. The funny thing is that preparing a stir-fry often means dinner will be on the table much faster than waiting for the delivery guy!
