For the past month or so I have been getting a box of organic vegetables delivered from Grow Wild. Last week I received the following:

  • 2 tomatoes
  • 1/2 cucumber
  • 1 red pepper
  • 2 onions
  • 14 broad bean pods
  • 1 ginormous cabbage (really picture does not do it justice)
  • 5 carrots
  • 1 green veg, that I think maybe something like pak choi, but am not certain

I guess that finding out about different types of vegetables and how to cook them is part of the reason I started getting the vegetable box in the first place. Although it is sort of embarrassing that I have had to ask twitter people twice what something is once here and beetroot.

So what to do with all these lovely veg? I started by making Broad Bean and Bacon Risotto. Which used up 1 onion and my broad beans.

I used up most of my cucumber making the raita for this Tandoori Chicken recipe from Too Many Chefs, this is one of my favourite recipes – ever. It is so simple and tasty and healthy. One of the best things about is that you can dial up and down the spiciness, without losing the main flavours, and by using the raita with cool yoghurt and cucumber even when the chicken is spicy the overall dish isn’t. (I never bother making the fancy rice – although I am sure it would be good if I put the extra effort in).

I used up most of the Cabbage by making a cabbage soup, I won’t talk about that here, as while my man said it was good, I thought it was horrible. Maybe my tastebuds were having an off day, or maybe he was just trying to make me feel better. I don’t know but I am certainly not going to risk mentioning it here. (This also used the last onion and 3 carrots).

I still have most of my salad stuff left (I think the unverified green veg is actually some sort of lettuce – whoops), I used the last of the cucumber and a tomato for my sandwich and tomorrow night I may make a salad to take into work with me to finish the rest off.

Tomorrow the whole process starts all over again!
