I think this is possibly the first recipe I am going to link to that has absolutely no pretensions of being good for you. It’s just really tasty and makes me think that summer is finally on its way.
I used a Rhubarb Sponge recipe from Jill Dupleix that was on the BBC Food website. I halved the quantities here, cause I believe that the only way to eat Rhubarb Sponge is warm with ice cream – making extra is a WASTE!
I cooked them in individual cute ramekins, just to be extra special.
UPDATE: This weekend I had my parents up for dinner, and I made these again, this time I used 75g of Coconut OIl rather than 100g of butter. The reason for doing this was two fold, I had just had my latest delivery of coconut oil and I wanted to start using it again, secondly and most importantly I wanted to see whether my mum would notice the difference. The good news is that she didn’t notice a thing, which I take as a great sign!!
